Over the summer, I gained a new food obsession: cowboy caviar. If you’ve never heard of this delicious concoction, it’s basically a mixture of a bunch of different vegetables and spices. I put it in the same category as dense bean salads if you’re more familiar with those. Cowboy caviar is so versatile which makes it the perfect food to meal prep with. You can use it as a dip, salad topping, side to a meal, or you can just eat it right out of the bowl. It is also great to meal prep because it gets better as it sits in the fridge. It marinates in the spices, so you can expect it to taste better each day! Cowboy caviar is a great way to get in some protein and vegetables, so if you’re looking for a healthy snack or side, look no further!
Ingredients:
1 15 oz can of black beans
1 15 oz can of whole kernel corn
1 15 oz can of garbanzo beans
1 15 oz can of pinto beans
1 bell pepper
1/2 large red onion
2 handfuls of grape tomatoes
Olive oil (drizzled)
Garlic powder
Onion powder
Cayenne pepper
Salt
Step 1
Rinse and drain the beans and corn and put into a large bowl.
Step 2
Dice the bell pepper into small chunks, and halve the tomatoes. Put into the mixture.
Step 3
Cut the onion in half and dice. Add to the mixture.
Step 4
Drizzle the olive oil and add in the spices. You can measure with your heart here! After, mix it all up and dig in!

Tips:
- This recipe is extremely customizable, so feel free to substitute any ingredients with ones you prefer. You can add as many types of beans as you would like, or you can choose to just add one kind.
- I use grape tomatoes for this recipe just to make chopping easier; however, you can also use roma tomatoes or any other kind.
- If you want more pepper or onions, you can choose to add another pepper or use the whole onion. Your choice!
- The mix of spices can be customized as well. Use whatever you think would work together.
- Other ingredients have been added in different recipes, so if you want to look up other cowboy caviar recipes, go for it! For example, I’ve seen other recipes that add in cilantro too.
